Ingredients
2 eggs
90 grams powdered sugar
90 gms melted butter / margarine/nutralite
½ tsp baking powder
1 tsp vanilla essence / mixed fruit/almond essence
2 tbsp chopped graced cherries
2 tbsp chopped black currants
2 tbsp almonds chopped
1 tbsp milk
Chocolate chips to sprinkle on top
Method
In a bowl break the eggs. Add sugar and butter. Beat with an
electric beat till light and pale. About 5 minutes. add butter and beat
Sieve the flour with baking powder.
Using a spatula, fold in the flour and rest of the ingredients
into the egg mixture. If batter is too thick add milk 1 tbsp.
Pour the batter into lined cupcake molds till ½ filled. Sprinkle
some chocolate chips on top. Bake in a preheated oven at 180° C till done
(appox 25 minutes)
